Bell Pepper Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3-4 large bell peppers (any color), seeded and chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup diced tomatoes (fresh or canned)
  • 1 teaspoon dried thyme or basil (optional)
  • ½ teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • ½ cup heavy cream or coconut milk (optional, for creaminess)
  • Fresh basil or parsley, for garnish (optional)

Instructions:

Step 1: Sauté aromatics

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until it becomes translucent, about 5 minutes.
  3. Stir in the garlic and cook for another 1 minute until fragrant.

Step 2: Cook the peppers

  1. Add the chopped bell peppers to the pot and cook for about 5-7 minutes, until they start to soften.

Step 3: Add liquids and seasonings

  1. Pour in the vegetable or chicken broth and add the diced tomatoes.
  2. Stir in the dried thyme or basil and smoked paprika if using.
  3. Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes, until the peppers are tender.

Step 4: Blend the soup

  1. Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until smooth. Be cautious with hot liquids!

Step 5: Add creaminess (optional)

  1. Return the soup to the pot if using a blender.
  2. Stir in the heavy cream or coconut milk if desired for a richer, creamier texture.
  3. Adjust seasoning with salt and pepper to taste.

Step 6: Garnish and serve

  1. Ladle the soup into bowls and garnish with fresh basil or parsley if desired.
